Banana Creme Parfaits

Holy delicious, Batman!  This recipe is from the Forks Over Knives Cookbook, by far my favorite cookbook for plant-based eating.  These parfaits seem intimidating because each layer has it’s own recipe, but really they are quite simple.  I find that the first time through any recipe it takes a while before you get to eat your food.  I made these twice in one week, and the second time around was quick and easy.  Give it a try!

I usually double the recipe for the muesli layer in order to keep the 3 layers equal sizes in the parfait.  The recipe as listed will do, but you will need to ration out the muesli carefully.

This recipe is listed as a breakfast parfait.  The banana creme layer is sweetened with brown rice syrup, so I would call this more of a dessert, to be enjoyed infrequently.  Even plant-based sweeteners like brown rice syrup, unsulfured molasses, and maple syrup contain no fiber and aren’t really a “whole” food at all.  Substitute your own home-made date syrup to make this beautiful dessert a 100% whole plant-based food.

Banana Creme Layer

Ingredients:

1 (12)oz Package extra firm silken tofu, drained

2 Ripe bananas, peeled and coarsely chopped

2 Tablespoons fresh lemon juice

1/2 Cup brown rice syrup

1 Teaspoon pure vanilla extract

Combine the ingredients in a blender and puree until smooth and creamy.  Chill at least 1 hour before serving.

Banana, Date, and Coconut Muesli Layer

Ingredients:

1 Cup rolled oats

3/4 Cup unsweetened soy or other plant-based milk

1/2 Cup pitted and chopped dates

1/4 Cup unsweetened coconut, toasted (at 350F for 5 minutes)

1 Banana, peeled and sliced

Combine all ingredients in a bowl and let soak 15 minutes

Fruit Salad Layer

Ingredients:

1 Pint fresh strawberries, stems removed, sliced

1 Pint fresh blueberries

2 Cups seedless grapes, halved

1 Ripe pear, cored and diced

2 Tablespoons fresh lemon juice

Pinch ground cinnamon

Combine all ingredients in a bowl and mix well.  Chill until ready to serve.

To Assemble the Parfaits

Gather the glasses you will use to make parfaits.  Spoon 1/4 cup of the banana cream into the bottom of a glass.  Top with 1/4 cup of the muesli, followed by 1/4 cup of the fruit salad.  Repeat until you have filled the glass, then do the same with the remaining parfait glasses.
