I’m not usually wild about cucumbers, but this recipe is full of complimentary flavors and I loved the combination! This dish can stand alone as lunch or be served as a side. The weather is warming up, so if I get invited to any springtime picnics I think I’ll choose to bring this cool salad!
1 Cucumber, chopped
1 Pack cherry tomatoes
4 Green onions chopped small (green and white parts)
1/2 Cup chopped fresh basil
1 Cup quinoa, cooked according to package directions
Zest and juice of 1 lemon
Combine the cucumber, cherry tomatoes, green onions, fresh basil and quinoa. Add the lemon zest and juice and mix all ingredients well. Chill for 1 hour before serving, if desired.
