What’s For Dinner? Kimchi Noodle Salad

I love how the cool cucumber in this recipe contrasts with the spicy and tangy kimchi.  Kimchi is a sort of Asian cabbage slaw that is available in the produce section of most grocery stores.  Be sure to check the ingredients list because some brands of kimchi contain shellfish, sugar, added sodium, and other stuff that you don’t want.  I like to use a whole jar of kimchi food processed for a few seconds to get some cabbage in every bite.


Box of whole wheat noodles, cooked and rinsed until cool

Jar of kimchi (chopped or food processed if desired)

Bunch of green onions, thinly sliced

1 Medium cucumber, halved, seeded, and thinly sliced

2 Tablespoons toasted sesame seeds

Place the cooked noodles, kimchi, cucumber slices and green onions in a large bowl and mix well.  Serve the noodle salad topped with the sesame seeds.
